Delicious, filling and fresh!! Clean eating can’t get more simpler than this dish, it ticks all the boxes, providing you with iron, lycopene, antioxidants and is quicker to prepare than it takes to think about what to order for take-out!

Ingredients
Beef Burger
- 100 g lean beef mince
- 1 chopped, fresh garlic clove
- 1/2 tsp. seaweed salt
- 1/4 tsp. chilli flakes
- 3 sprigs chopped fresh parsley
- 1/4 lemon, to squeeze over burger
Salad
- 4 cos lettuce leaves, sliced in half
- 1 lebanese cucumber, spiralised
- 8 cherry tomatoes, sliced in half
- 1 tsp. apple cider vinegarette (inflused with chilli, garlic, salt)
Instructions
- Prepare the beef burger by combining the mince, salt, chilli, parsley and garlic and form it into a patty.
- Cook the burger in a non-stick pan for 5-8 minutes turning half way through cooking ensuring its cooked through. Or airfry for 6 minutes on one side then 3-4 minutes on the other, until well cooked. Set aside.
- Prepare the salad on the plate by adding the cos leaves first, the cucumber spirals on top and finally the cherry tomatoes.
- Sprinkle with the apple cider vinegarette.
- Top with the burger and a squeeze of lemon juice.
