Chicken Broth Egg Soup
Ingredients
- 2 cups chicken broth
- 1/2 onion, sliced thinly
- 1 cup broccoli florets, chopped into chunks
- 1/2 tsp. cracked pepper to serve
- 1 egg, whole
- 3 egg whites
Instructions
- Heat the chicken broth in a pot, with the broccoli florets and onion until the broccoli is tender (approx 3-5 minutes)
- Whisk the whole egg and egg whites into a bowl then stir briskly into the broth stirring constantly for approx 1-2 minutes
- Serve into a bowl with cracked pepper
