Chicken Broth Egg Soup

Ingredients

  • 2 cups chicken broth
  • 1/2 onion, sliced thinly
  • 1 cup broccoli florets, chopped into chunks
  • 1/2 tsp. cracked pepper to serve
  • 1 egg, whole
  • 3 egg whites

Instructions

  1. Heat the chicken broth in a pot, with the broccoli florets and onion until the broccoli is tender (approx 3-5 minutes)
  2. Whisk the whole egg and egg whites into a bowl then stir briskly into the broth stirring constantly for approx 1-2 minutes
  3. Serve into a bowl with cracked pepper
