So light and fresh and ever so tasty! White albacore tuna is a rich source of complete protein, selenium and vitamin B-12 and is a better source of heart-healthy omega-3 fatty acids than other tuna species.

White Albacore Tuna & Asparagus
Ingredients
- 100 g white albacore tuna, fresh
- 1 tomato, chopped
- 1 spring onion, chopped
- 6 cos lettuce leaves
- 1 asparagus, small bunch
- 1/2 tsp. seaweed salt
- 1/2 tsp. paprika
- 1 tsp. oregano
- 1/2 tsp. chilli
- 1/2 lemon
Instructions
- Marinate the albacore tuna with the chilli, 1/4 tsp salt, oregano, paprika. Place on a non-stick dish in your airfryer for 10 minutes on 180degrees, turning over halfway through cooking. Or heat a non-stick pan and cook for 10 minutes on med heat and turn over halfway through cooking.
- Sprinkle 1/4 tsp salt to the asparagus and cook in a non-stick frypan and for approx 3-5 minutes turning every so often to ensure even cooking.
- Assemble the lettuce, tomato and spring onion onto your plate and sprinkle with a little salt, pepper. Add the cooked asparagus and the cooked white albacore tuna and squeeze the whole dish with the 1/2 lemon.
