BEEF & SILVERBEET SOUP

This soup is so filling and delicious, the silverbeet gives it such a lovely smoothness and texture and the beef provides beneficial protein and goodness.
Serves 4
Ingredients:
400gms chuck steak – all visible fat removed and chopped into 2 cm cubes
1 onion, chopped
1 garlic clove, crushed
1 tablespoon Organic Vegetable Stock Paste or low sodium organic vegetable stock cube
1 teaspoon organic tomato paste
Pinch of cracked pepper
1 tbls olive oil* (omit if on HCG protocol)
900mls water
1/2 bunch silverbeet, washed and roughly chopped
Method:
- Saute’ the garlic and onion in a non-stick pan with either the olive oil or 90mls water (1MIN / 90deg / Speed1)
- Add the beef, stir and cook for 1 minute (TM – 1MIN/90deg/Speed1/Reverse)
- Add the Water, Stock Paste, Tomato Paste, pepper and cook for 1 1/2 hrs or until beef is tender. (90MIN / 100deg/Speed1/Reverse – leave MC off and place simmering basket on top of lid)
- Add the silverbeet and cook for another 5 minutes (5Min/100deg/Speed1/Reverse – MC off
