CAULIFLOWER PIZZA
What a delicious healthy alternative to wheat-pizza. Not only is it gluten-free but you’ll be enjoying an additional serve of veggies in your day!
Ingredients
1/2 head cauliflower, cut into florets
1 egg, lightly beaten
1 onion, finely chopped
1 tsp cumin
1 tsp rosemary
1 tsp parsley
1 tsp sage
1 tsp olive oil
Salt & Pepper
Method
Place the cauliflower in a food processor and pulse until its the consistency of breadcrumbs.
Then place the cauliflower in a teatowel and squeeze out as much liquid as possible.
Place the cauliflower, egg, onion, spices, herbs, olive oil, salt and pepper in a large mixing bowl and throughly combine.
Place the mixture onto a line baking tray and lay a second sheet of baking paper on top of the mixture and use your palms to flatten it into a circle.
Bake in a 180deg oven for 20-25 minutes or until the base is firm and slightly browned.
Remove from the oven and top with your favourite ingredients – you can top with some extra herbs and drizzle with olive oil for extra flavour.
Return the pizza to the oven for another 10-15 minutes.
Take the pizza out of the oven and cool for a few minutes before slicing.
