ORANGE ALMOND CAKE
Ingredients
Cake
1 litre water
2 whole oranges
250gms almond meals
250gms caster sugar
3 eggs
1 tsp baking powder
Syrup
60-80gms orange juice
Rind from 1 whole orange, sliced thinly and pith removed
80gms sugar
Method
Place water in the bottom pan of a double steamer saucepan and the 2 oranges in the top steamer pot. Bring to the boil on high heat then on low-medium to simmer for 40 minutes.
Carefully remove the oranges with tongs and set aside to cool. Once cooled, finely chop the oranges or place in a food processor and pulse until finely chopped.
Place the chopped oranges, almond meal, sugar, eggs and baking powder in a mixing bowl and mix on medium speed until well combined.
Pour mixture into a prepared tin and baked in a 180 degree oven for 40-45 minutes or until a skewer inserted into the centre of the cake comes out clean.
Allow cake to cool in tin for 5 minutes before transferring to a wire rack.
Make the syrup by combining all the ingredients into a pot and allow to boil, then simmer gently for 5-10 minutes until the syrup thickens.
Pour the syrup onto the cooled cake and serve with sliced mandarin segments.
