Orange & Mango Chia Pudding

Orange & Mango Chia Puddings
Ingredients:
100gms chia seeds
1 orange
6 fresh mint leaves
350gms fresh or frozen mango cheeks
400gms coconut milk
1/2 tsp ground cardamon
1 tblsp pure maple syrup
Topping:
100gms mixed macadamia nuts and almonds
50gms shredded coconut
1/2 tsp cinnamon
1/2 tsp coconut oil
100gms greek yoghurt (to serve)
Method:
Place the mint, 150gms mango & orange and chop 10seconds/speed 9 or in a food processor until well chopped
Add all the remaining ingredients except the remaining mango and combine 3seconds/speed 3 or pulse for a few seconds in your food processor.
Divide the mixture into 4 sealable jars and place in the refrigerator for 10 minutes to firm slightly. Then add the remaining mango and allow to set overnight.
Add the macadamia/almonds and mix 1second/speed6 or until well combined.
Add the remaining topping ingredients except yoghurt and heat 5mins/50degrees/reverse/speed1 or place in a pot and stir over a low heat for 5 minutes. Place into a jar until ready to serve.
To serve: add the nut crunch topping onto puddings and serve with greek yoghurt.
