Ricotta Gnocchi

Amazingly light and fluffy, these little morsels of ricotta goodness will have you coming back for more.  Enjoy as a quick weeknight meal or impress family and friends with your creativity in creating these ricotta gnocchi.

 

 

Ricotta Gnocchi

Ingredients

  • 100 g parmesan cheese, grated
  • 200 g bakers flour
  • 1 egg
  • 1 tsp. salt
  • 300 g fresh ricotta

Instructions

  1. Add flour, egg, salt, parmesan cheese and ricotta into the thermomix bowl and knead for 1 minute 30 seconds / knead function.
  2. Transfer to a silicon mat and divide into 4 portions. Roll out each portion into long sausages.
  3. Cut pieces from each sausage, approx 1 cm long. You can score each piece with a fork or roll them onto a gnocchi wooden board.
  4. To cook: Fill a pot with water and let it boil. Once it boils add the gnocchi and cook until the gnocchi rise to the surface, approximately 2 minutes
  5. Serve with your favourite sauce. Suggestions: napolitan sauce; burnt butter and sage; carbonara sauce. Top with grated parmesan cheese
